| Tonight was simple: Pan-broiled steak; carrots with butter, salt & pepper; broccoli with lemon, olive oil & pepper; rice with bell pepper, carrots. | Scalloped ham & potato casserole. It's s omething I picked up from one of my BH&G cookbooks. The first time I made it, my husband recognized it as something his mother still makes, but she calls it "hot dog pie", with cut-up hot dogs in lieu of diced ham and it has a pastry crust. That's just overboard, in my book- when the main ingrediant of a dish is potatoes, why do you need a crust???  |

| Irish (lamb) stew with red wine, followed by Banana bread with toasted pecans, both made from scratch. I just got a wild hair tonight. If I have any strength left I'll make a batch of savory seitan for my vegetarian husband. |

| Something with chicken; I haven't decided yet. I just found an unopened jar of 5 spice powder in my cabinet, so I'm thinking about using it. Maybe sauted chicken with 5 spice, lemon & ginger root? Does that sound OK? |

| Last night flatbread pizzas and salad. I used red pesto, thin slices of onion and bits of red bell pepper, left-over roast duck, and grated extra sharp cheddar, with a drizzle of olive oil and a bit of cracked black pepper. We're on the same wavelength- I asked Jayson what he wanted for dinner tonight and he said spaghetti & meatballs! I make the meatballs from scratch and use whole wheat pasta. We'll have a green salad as well. |

| We were going to have sauteed chicken & mushrooms with blanched broccoli & rice, but I forgot that we have leftovers from a meal out on Friday. | Tonight is chicken, noodles and broccoli in an Asian sauce. This is a super-easy meal and a little on the spicy side, so on a day like today when I'm feeling under the weather it's a good choice. |

| Tonight is pot luck. The rest of the chicken & mushrooms, the rest of the pasta. I think I might make roll-up sandwiches, my husband can have the pasta, and I'll have a side salad or some low-fat cottage cheese (which is no hardship, I love the stuff). I did pick up a nice little pork tenderloin. There are some really good recipes in this month's Cooking Light. | Ooh- I love pork tenderloin. I usually marinate it in red wine vinegar, olive oil, garlic & herbs for a couple hours then grill it with some halved onions. Tonight I think we'll have tacos. |

| Well, we had pasta with meat sauce last night and unfortunately, it's Chick-Fil-A tonight. :sigh: School Spirit nite for daughter's school,, they get 20% of the take. You'd think my check for $400/month would be enough..right? |
