Tonight is beef pot pie, made with a cream cheese pastry. The beef is from our Christmas roast, and the veg are green beans, carrots and corn.

Tonight we're having pork roasted with sauerkraut & thinly sliced onions, with garlic mashed potatoes and greens beans with balsamic dressing.

It's ready to go into the oven; my husband is supposed to put it in at quarter after 5:00.

I got a great deal on the roast (less than $4.00)! It's almost 2 lbs., enough for two sets of dinners and some leftovers.

I made my first pot pie over Christmas. Portobella mushroom pot pie, I rather liked it and will have to make it again.

I usually make pie with puff pastry or mashed potato top.

Doesn't a mashed potato top make it "shepherd's pie"? Puffed pastry is good, but a different pie experience.

I love POT PIE! Correctly made, the interior is the hottest man-made substance in existence.

As for us, we had take out Vietnamese, from a new place here in our little town...

If I say so myself, I make very good pot pies! I like the cream cheese pastry; it's easy to make, tender, and flaky. It browns nicely, too. I always use carmelized onions, whatever the rest of the filling.

I used to make Catherine's pastry (lard and butter). It was divine, but heart attack in a pie tin!

I love shepherd's pie, too...it's been ages since I've made one. But I'm happy to say that ground lamb is available here, so I'll probably make some soon.

Tonight is pork quesadillas: left-over roast, red bell pepper, sharp cheddar inside, and topped with salsa & Greek yogurt (in lieu of sour cream). We're going to have a side salad of spinach with carrots, red onion and olives.

Only if it has the sheperd's pie filling! Lamb is used for shepherd's pie (or in our case soya mince!), beef for cottage pie but the potato top can be used with any filling.

Casserole time...or rather, it was.

I chopped up roast pork, sauerkraut, and some onion, mixed it with ham gravy and a bit of mustard, topped it with mashed potatoes & some grated cheese...it was a big hit. My husband liked it even more than I did (and even one of the cats decided to clean an almost empty dish. He's our omnivore).

Tonight my husband is in NYC for the day (lucky bum), so I'll have something he can't/won't eat...probably a turkey and black bean burrito with plenty of hot salsa!

Oh, we still have enough of the pork roast left for one more dinner! I'm going to chop it fine and mix with homemade BBQ sauce. We'll have faux pulled pork sandwiches and I'll make some German coleslaw or saute red cabbage & apples with a splash of cider.

The pork roast was almost 2 lbs. and it was enough for 5 meals for both of us.

That sounds good.

I just saw a recipe on the NYT website for a pasta dish with olives, red sauce & olives, plus carmelized cauliflower...there was a photo, and did it look good!

Last night was beef stew over wide egg noodles (I'm having the last bit for lunch today).

Tonight is savory bread pudding. I'm using the dressing leftovers from Thanksgiving; I made a sausage dressing.

I'm going to add sauteed mushrooms and some thin slices of onion, a bit of cheese, crumbled bacon and some leftover challah and egg and milk before I put it in to bake. We'll have a spinach side salad as well.

Swiss Steak on Friday, over egg noodles. It's so easy...just get a marinating steak and pound it; sear both sides and put into a slow cooker with a large can of tomatoes and one large sliced white onion. Cook while you're at work.

Serve over noodles. It's good; very flavorful.

I think I'll be roasting a chicken over the weekend, and we'll have mashed potatoes and gravy and green beans and carrots. Lots of leftovers for the week!

The leftover turkey from Thanksgiving will go into a red turkey chili, too. I have some heirloom beans I got at the farmers market. That's for me, my husband won't eat chili...or turkey...or beans. So I'll freeze it in small portions for lunches and single dinners.

And the Swiss Steak is cooking even now...tomorrow I think I'll make the chili.

I've been thinking about good desserts for this time of year.

Rice pudding. Tapioca pudding. Bread puddings (sweet).

Baked apples. Fruit compote.
