Probably a mixed greens salad with tuna (yogurt, some mayo, shredded carrots & sliced onion with a bit of dijon) and lots of vegetables. Balsamic dressing.

Chicken-spinach-ricotta stuffed manicotti with homemade marinara sauce. My tummy is growling just smelling it bake in the oven!

(I probably should fix a veggie to go with it.... hm.)

Sausages and sauerkraut in the oven (with onions mixed in) and potatoes (not sure yet how I'll prepare them) with mixed yellow & green beans.

It's such gorgeous weather these days! I think I'll be making stews again soon. And on Friday maybe a roast chicken.

BLTs tonight with the last of the garden tomatoes. This has been a rotten (literally) tomato season around here.

Roast chicken sounds really good. I'll have to get one out of the freezer to thaw in time for Saturday's dinner. Good idea, Eileen! Smile

Eggplant parm with a couple of farmstand eggplants. I'm by myself with the kids tonight, so I don't have to cater to DH's picky palate. Jayson will eat anything so we'll enjoy this just for ourselves.

Susie, you are not alone with the bad tomato season - it's been bad here. I've scarcely gotten any from my vines, and it seems to be bad all over our town.

I absolutely love BLTs, too.

No kidding. By this time last year I had so many tomatoes I made six quarts of sauce. This year all that's left are a handful of cherry tomatoes.

Tonight is supposed to be venison pie but this Indian Summer heat wave is making me think twice about heating up the oven. Maybe we'll do pork chops on the grill with salad.

A couple of weeks ago I made more chicken stock, and made my husband some chicken soup (I hate the stuff).

I used more stock for a mushroom soup with wild and white rice; we had that two days ago.

Last night it was macaroni & cheese (wheat rotini & regular small shells, with cheddar & swiss, and some julienned carrots).

I think leftovers tonight; we're going to a dance.

Tomorrow...it depends whether we stay at home during the day. Maybe slow-cooked pork chops in marinara sauce, over noodles.

Last night my parents were over and I made portobella mushroom cannelloni which was rather yummy and a huge Black Forrest Cheesecake. I gave half of the cheesecake to my parents to take home and there is still a weeks worth left!
