Dipping a Toe in the Water

Here's my recipe for sour cherry cobbler:

4 cups sour cherries
2 tablespoons cornstarch
2/3 cup sugar
2 tablespoons lemon juice
1/4 teaspoon almond extract

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
6 tablespoons cold unsalted butter
1/4 cup boiling water

Pit the cherries over a bowl, so the juice gets saved. Stir in cornstarch, sugar, lemon juice, and almond extract.

In a small bowl stir together flour, baking powder, salt, sugar, and the butter (cut into little bits), blend the mixture until it resembles coarse meal. Add boiling water, stirring until the batter is just combined.

Pour the cherry mixture into a 8" cast iron skillet (for that rustic look) and bring to a boil (or bring to a boil in a sauce pan and pour into a baking dish). Drop the batter by heaping tablespoons onto the cherries, and bake the cobbler in the middle of a preheated 350F oven for 45 to 50 minutes, or until the topping is golden.

Ah...sour cherries are the best. (And nearly impossible to find in the markets around here.)

My favorite recipe is for cherry crumble.

I'm afraid I can't give you measurements, but here's a rough outline of a recipe:

Cherry Crumble

pitted sour cherries
almond extract
lemon juice
corn starch
flour
butter
rolled oats
brown sugar
cinnamon
toasted chopped almonds

For every cup of cherries add 1 teaspoon brown sugar, 1/8th tsp. extract and a dash of fresh lemon juice, plus a generous pinch of corn starch. Toss well to coat and put into a baking dish. Dot with bits of butter.

Make the topping:

For every tablespoon of butter add about 1 tsp. of flour, 1 tbl. of brown sugar, 1 tsp. of almonds, a hearty shake of cinnamon and a heaping tsp. of oats. Crumble together with your fingers until well mixed. Add more of any ingredient to taste if you prefer. (I like lots of cinnamon and oat.)

Bake in a moderate oven until the cherries are bubbling and the topping is browned and crisp.

Good hot or cold, and especially good the next morning for breakfast!

Sounds lovely. I actually saw sour cherries for sale last week but couldn't figure out how I would use them. Now I'll have to go back!
