Ah...sour cherries are the best. (And nearly impossible to find in the markets around here.)
My favorite recipe is for cherry crumble.
I'm afraid I can't give you measurements, but here's a rough outline of a recipe:
Cherry Crumblepitted sour cherries
almond extract
lemon juice
corn starch
flour
butter
rolled oats
brown sugar
cinnamon
toasted chopped almonds
For every cup of cherries add 1 teaspoon brown sugar, 1/8th tsp. extract and a dash of fresh lemon juice, plus a generous pinch of corn starch. Toss well to coat and put into a baking dish. Dot with bits of butter.
Make the topping:
For every tablespoon of butter add about 1 tsp. of flour, 1 tbl. of brown sugar, 1 tsp. of almonds, a hearty shake of cinnamon and a heaping tsp. of oats. Crumble together with your fingers until well mixed. Add more of any ingredient to taste if you prefer. (I like lots of cinnamon and oat.)
Bake in a moderate oven until the cherries are bubbling and the topping is browned and crisp.
Good hot or cold, and especially good the next morning for breakfast!
